Spiced Pear and Walnut Pancakes
Ingredients:
For the Pancakes:
1 ½ cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon salt
1 ¼ cups buttermilk
1 egg
2 tablespoons unsalted butter, melted
1 ripe pear, grated
¼ cup chopped walnuts
For the Topping:
1 pear, thinly sliced
2 tablespoons butter
2 tablespoons maple syrup
1 tablespoon brown sugar
¼ teaspoon ground cinnamon
¼ cup toasted walnuts
Instructions:
Make the Pancakes:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a separate bowl, whisk the buttermilk, egg, and melted butter until combined. Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).
Fold in the grated pear and chopped walnuts.
Cook the Pancakes:
Heat a non-stick skillet or griddle over medium heat and grease lightly with butter.
Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown. Repeat with the remaining batter.
Prepare the Topping:
In a small skillet, melt butter over medium heat. Add the sliced pear, maple syrup, brown sugar, and cinnamon. Cook for 2-3 minutes until the pears soften and caramelize.
Sprinkle the toasted walnuts on top.
Assemble and Serve:
Stack the pancakes on a plate, top with the caramelized pears and walnut mixture, and drizzle with additional maple syrup if desired.
Perfect Pairings
What’s a brunch without the perfect drink? These Spiced Pear and Walnut Pancakes pair beautifully with a glass of sparkling Prosecco. The light, crisp bubbles balance the warm spices and sweetness of the dish, creating a delightful contrast. For those who prefer non-alcoholic options, a warm spiced chai latte or a hot apple cider works just as well.
